Quinoa Tabooli Salad

1 1/3 C Water
2/3 C Quinoa
6 Roma tomatoes, diced
1 C Parsley, chopped
2 T Fresh mint, chopped
1 Large garlic clove, pressed
1/2 t Fresh basil, chopped
1/2 C Fresh lemon juice
1/4 C Olive oil
Salt and pepper to taste
Rinse quinoa either by using a mesh strainer or by running fresh water over the quinoa in a pot ... drain excess water ... place quinoa and water in a saucepan and bring to a boil ... reduce to simmer, cover, and cook until all the water is absorbed, about 15 minutes ... the quinoa is done when all the grains have turned from white to transparent and the spiral-like germ has separated ... set aside to cool slightly ...
In a mixing bowl, add the cooked quinoa and the rest of the ingredients and toss lightly ... chill in refrigerator up to 4 hours to allow flavors to blend ...
Serve with pita bread

If you're a cilantro lover like me, feel free to substitute chopped cilantro for the chopped parsley ... also if you're an onion or cucumber lover, feel free to add a half cup or so of chopped scallions and/or diced seedless cucumber to the mixture ...
A nicely chilled sauvignon blanc goes well with this salad ...
