1 Large lemon, sliced thinly
4 Sprigs fresh rosemary
2 Salmon fillets, skin removed
Coarse salt to taste
Olive oil
Preheat oven to 400 degrees ... thinly slice the lemon so that the cartwheels would cover both pieces of salmon on both the top and the bottom of the fillets ... arrange half the lemon slices in a single layer in a baking dish ... layer the lemons with two sprigs of rosemary ... place the salmon fillets over the rosemary and lemon cartwheels ... sprinkle the salmon with the salt ... place the remaining two sprigs of rosemary over the salted fillets ... top the rosemary topped fillets with the remaining lemon cartwheels ... drizzle with olive oil ... bake approximately 20 minutes or until the fillets are easily flaked with a fork ...
