Lemon Roasted Potatoes

3 Pounds potatoes
1/2 C Olive oil
3 Medium to large fresh lemons, juiced
3 Cloves fresh garlic, minced
2 t Coarse salt
1/2 t Freshly ground black pepper
Fresh oregano or any one or mixture of your favorite herb's
Feta cheese, crumbled
Heat oven to 425 degrees ... scrub potatoes and cut into large bite sized pieces ... in a small non-reactive mixing bowl, mix the olive oil, lemon juice, minced garlic, salt, pepper, and a generous amount of fresh oregano (or other's]) and whisk until salt is dissolved ... toss the potatoes with the mixture ... place the potato pieces in a single layer in a large rimmed baking dish along with the remaining mixture ... cover tightly with foil ... cook for 20 minutes ... carefully remove foil and baste ... roast uncovered until potatoes are tender and golden brown, about 20 minutes longer, turning the potatoes once with a metal spatula after the first 10 minutes ... sprinkle a little crumbled feta cheese over the top of the potatoes and serve immediately ...
