Lemon Jelly
%^)This is a simple recipe that makes a really easy good lemon jelly ...
1 T Granulated gelatin
1/4 C Cold water
1 C Boiling water
1/2 C Fine granulated sugar
1/2 C Fresh lemon juice
Pour the cold water into a non-reactive dish and add the granulated gelatin ... let stand for 15 minutes or longer until all the water is absorbed ... add the boiling water and sugar and stir until the gelatin mixture and sugar are dissolved ... allow the mixture to cool a bit ... add the lemon juice and stir ... cover and place in refrigerator until the jelly becomes firm.
This was great with a tablespoon or two plopped on top of cream cheese blintzes ... you can also turn the jelly into small molds or cups before placing it in the refrigerator and after the jelly has set, turn the molds or cups onto dessert plates and surround it with fresh berries or other fresh cut fruit ...
