Lemon Granita

1 C Sugar
3 C Water
1 C Fresh lemon juice (approx 4 large lemons)
2 Sprigs fresh mint

In a non reactive sauce pan, combine the sugar and water and bring to a boil ... stir until the sugar dissolves ... reduce the heat and simmer for 5 minutes.

Remove from the heat and pour in the fresh lemon juice ... bruise the mint and add to the mixture ... stir to mix ... let cool.

Strain the mixture into 2 flat pie pans ... set in the freezer for 1/2 hour ... then scrape with a fork and return to the freezer for 2 more hours, scraping every half hour or until the granita is a flaky slush.

When ready to serve, grate the ice with a fork one last time and scoop into 6 chilled small goblets.

A perfect dessert to eat while watching fireworks (originally posted a few years ago right before the 4th of July) !
