Grilled Lemon Sage Chicken

Soooooo ... seeings as how it hasn't rained here for 17 months, I tried firing up the Weber figuring like the old "wash-your-car-and-it-will-rain" saying that if I did I could MAKE it rain ... WRONG ! Nary a drop ! But the chicken sure was good !

8 Boneless, skinless chicken breast fillets
2/3 C EVOO
Juice from 3 to 4 lemons (approx. 1/2 C)
1 heaping T Chopped fresh rosemary
1/3 C Chopped fresh sage leaves
1/2 t Salt
1 heaping T Black peppercorns, cracked
4 Cloves garlic, minced
1 heaping t Lemon zest

1. Rinse chicken and pat dry. Place pieces between 2 sheets of plastic wrap and flatten with a mallet. Arrange chicken in a non-reactive dish.

2. In a small bowl, combine oil, lemon juice, herbs, salt, pepper, garlic, and lemon zest. Mix well. Pour over chicken and turn pieces to coat evenly. Cover and refrigerate for several hours or overnight, turning pieces occasionally.

3. Grill chicken over medium-hot fire approx. 15 minutes or until juice runs clear when chicken is pierced with an ice pick.

Serve garnished with a lemon cartwheel sliced halfway through the middle and twisted so that it stands up on the plate along side sprigs of fresh sage leaves.

I served this with a Geyer Peak Sauvignon Blanc ... a wonderful combination !
