Fresh Lemon Pasta

This easy pasta is a killer when combined with olive oil and fresh minced garlic !

3 1/3 Cups flour
1/2 t Salt
2 Eggs, beaten
3/4 C Fresh lemon juice (about 4 to 5 medium lemons)
1 t Olive oil

Stir together 3 cups of the flour and the salt in a mixing bowl ... in a separate bowl, combine the beaten eggs, lemon juice, and olive oil ... add to the flour mixture and mix well ... sprinkle your kneading surface with the remaining flour and knead dough for 10 minutes ... cover kneaded dough for 10 minutes ... roll dough out and cut into your desired shape ... cook like regular pasta ...

Makes 1 1/2 pounds

I swear ... I can almost eat the whole 1 1/2 pounds myself ... ummmmm !
