Candied Lemon Peel
%^)Read an interesting article earlier in the week about the cholesterol lowering powers of citrus peel ... the Florida citrus industry is working with a European company to create a natural product from citrus peel to introduce into the marketplace as an alternative to statin drugs ... anyway ... got me to thinking that I've never posted my candied lemon peel recipe so thought I would throw it out there for fellow FLDGer''s that may have a bit of a sweet tooth ...
6 Medium-large fresh lemons
12 C Cold water
1 1/2 C Sugar
1/2 C Citrus honey
1 3/4 C Water
1/2 C Sugar
Wash the lemons to remove the wax coating ... score the peel of each lemon into lengthwise quarters ... remove the sections of peel ... cut the sections of peel into long strips about 3/8-inch wide ... put the cold water and peel in a large pot and bring to a boil ... boil for 10 minutes ... drain and rinse ...
In a large saucepan, bring to a boil the 1 1/2 cups of sugar and the honey in the 1 3/4 cups of water ... boil for 1 minute ... add the peel and briskly simmer for 40 to 45 minutes ... stir frequently to avoid sticking ... remove from heat and drain well ...
In a large bowl, toss the drained peel with the 1/2 cup of sugar to coat well ... spread the coated peel on wire racks with waxed paper underneath the racks to dry ... you may need to re-dip the peel in sugar as it dries ... store in a tightly covered container ...
Makes approximately 1 pound
